Let cool completely inside the cake tin. The spinach pie will keep covered for 3 days in the fridge. Oil a 30cm cake tin with a removable base.

Cut the sheet lengthways down the middle to make two long rectangles. Cut little widthways slashes along the other piece of pastry, stopping just over a centimetre shy of the edges. Brush around the spinach sausage with some of the beaten egg. Gently lift the sheet up and stretch it a little to open up the slashes and then put carefully over the spinach-topped pastry.

Brush over any remaining margarine. Finally, let the non-stick paper rest over the top. This will help prevent the top from burning. The extra paper will also allow you to lift the cooked pie out easily. A traditional Greek pie commonly made with filo pastry. Shop bought filo saves a lot of time and is much easier.

Brush with a touch of olive oil. In a bowl, mash together feta cheese and eggs then add to the spinach mixture . Top with the remaining buttered pastry sheets.

In step 2, line 4 individual ramekins or pie moulds with the buttered filo. Fill, cover and bake for 20 minutes until golden. Preheat the oven to 200°C/Gas Mark 6.
